Decided to do enchiladas with a twist tonight and I finally have my taste back in time for this bad boy πŸ˜πŸ€€πŸ™ŒπŸ»

Ingredients: (serves 2)
✨ 450g 5% beef mince
✨ 1 taco seasoning (@oldelpaso)
✨ 2 tbsp honey
✨ 2 bell peppers chopped
✨ 4 @mydelikitchen brioche wraps
✨ 60g Red Leicestershire
✨ 60g mozzarella
✨ 1 tbsp soured cream (per two portions)
✨ 1 tbsp @lidlgb smashed avo & lime (per two portions)
✨ few baby plum tomatoes, chopped

1. Fry off you ground beef until almost cooked
2. Add in the chopped peppers
3. Add in your taco seasoning with some water & let it simmer for 10 mins
4. Add in your honey let it simmer for about 5 more mins
5. Preheat the oven to 180degrees and start to assemble your enchiladas
6. Place some of the meat onto the wrap and add some of the mozzarella cheese into this (repeat until all are filled)
7. Place in an oven dish & place the remaining cheese on top including the Red Leicester
8. Bake in the oven for 10-15 mins (however you like you cheese melted)
9. Remove from oven and add your toppings

This was high in calories but you can amend to make lower in calories – I barely had anything to eat today so needed to bulk up the calories! πŸ™πŸ»
