My fave dish Iโ€™ve made so far, not even gonna lie ๐Ÿ˜๐Ÿคค donโ€™t believe me? Save it & give it a try ๐Ÿ“Œ

Ingredients: (serves 2)
– 400g gnocchi
– 40g chorizo, diced
– 1 Red pepper, diced
– 1/2 onion, diced
– 2 tsp garlic purรฉe
– 40g lightest @philadelphia_uki
– 65ml white wine (I used Pinot as thatโ€™s what I had in)
– handful of spinach
– 15g Parmesan

Method:
1. Spray a pan with frylight & pan fry your chorizo for a couple mins
2. Add in your pepper & onion and fry for further minute (Iโ€™d also put my gnocchi in boiling water now)
3. Add in your garlic & fry for about a minute more, then add the white wine and burn off the alcohol
4. Add some water from the gnocchi in the pan along with the cream cheese, mix well
5. Add in the spinach and wilt
6. Add your gnocchi to this & coat well (add some of the Parmesan cheese here)
7. Serve & top with the rest of the Parmesan & dry parsley
